Heart Easy™ Turkey Lasagna

 

This is one of my favorite recipes, easy to make and delicious for the colder weather. Layers of delicious, fresh vegetables, ground turkey and oodles of tomato sauce and cheese create a banquet of temptations in a pan. What’s not to love about this heart healthy dish? Make it tonight from scratch or use one of the wonderful and heart healthy Francesco Rinaldi To Be Healthy Pasta Sauces. Watch the smiles on your family’s faces. It’s fantastico! Serves 6-8

Ingredients

  • Non fat olive oil spray
  • 1 lb. ground turkey breast
  • 1 medium onion, chopped
  • 1 jar FRANCESCO RINALDI® TO BE HEALTHY™ Pasta Sauce*
  • 1/2 Cup water
  • 1/2 Cup carrots, grated
  • 1 medium zucchini, peeled and thin sliced
  • 1 1/2 Cup non-fat cottage cheese
  • 15 oz. non fat (or very low fat) ricotta
  • 1/4 Cup SoySation® Parmesan Style cheese
  • 1 Cup SoySation® 3 cheese blend, or Veggie Shreds Mozzarella (reserve 1/4 cup)
  • 1/2 tsp. fresh ground black pepper
  • 1/4 tsp. Kosher salt, optional. (taste before automatically using)
  • 1 lb. lasagna noodles (wheat or rice pasta)

Directions

Preheat oven to 350°

Spray the inside of a large skillet with non fat olive oil spray. Add onions and sauté 2-3 minutes until tender. Add garlic and 1 tsp. of the olive oil. Continue to cook for 1 minute.

Cut the ground turkey breast into cubes by scoring across the meat horizontally and vertically. Add the cubed turkey breast meat to the skillet and cook until all pink is gone, about 4-5 minutes. As turkey is cooking use a potato masher or a fork to reduce it down into small kernels.

When turkey is no longer pink, stir in the carrots, FRANCESCO RINALDI® TO BE HEALTHY™ Pasta Sauce, water, pepper. Bring back to a boil, cover and cook for 20 minutes on simmer. Remove cover and cook for another 15 minutes on simmer. Sauce will begin to thicken and reduce. Cook until sauce is reduced by one third. Sauce should be thick, not watery. Set aside to cool slightly.

In a medium bowl combine the cottage cheese, ricotta cheese, soy cheese, Parmesan cheese, 3/4 cup SoySation Three Cheese blend, pepper and stir.

Meanwhile boil the water and under-cook the pasta. Follow package directions, but remove from heat when noodles are pliable but still a little firm. Drain, run cool water over noodles to cool.

Spray the bottom of a 9″ x13″ pan with non fat olive oil spray. Place a layer of noodles on the bottom of the pan, skootch together tightly so there are no gaps between noodles.

Spoon a layer of the turkey meat sauce over the noodles.

Make a layer with zucchini rounds and then add a layer of the cheese mixture.

On top of the cheese layer place another layer of lasagna noodles, and repeat the layer process of meat, zucchini, cheese mixture and finally the 1/4 cup of SoySation® on top.

Cover with foil, bake for 20 minutes. Remove foil after 20 minutes, and bake for another 10-15 minutes or until top is bubbly and brown. Allow to cool for 5 minutes before serving.

You can make this ahead and freeze it, if you like. Or, freeze the leftovers. Allow to thaw and reheat in microwave or oven.

*Use one of the Francesco Rinaldi® To Be Healthy™ Pasta Sauces. Spicy Marinara and Tomato and Basil are my favorites with this dish, but try the Garlic & Onion or Garden Vegetable and see what becomes your family’s favorite.
